Paljassaare Kalatööstus contributes to dough-related research AS Paljassaare Kalatööstus and Competence Centre of Food and Fermentation Technologies (CCFFT) have began collaboration on mapping technologies of dough products, as well as their quality and stability parameters and aim to elaborate innovative solutions. In just 2 years, Vichiunai Group has launched the production of frozen and chilled dough products and become market leader in commercial pizza and pancake production. „Commercially produced chilled pizzas are relatively new on the Baltic markets. Our purpose is to make the best pizzas in the Baltic countries,“ said Mauno Leppik, board chairman of AS Paljassaare Kalatööstus. „We are also aware of the fact that consumers find stable and high quality of the products increasingly important and in order to guarantee our products with the best quality, we decided to team up with the best specialists of the field,“ Leppik added. The collaboration between AS Paljassaare Kalatööstus and Competence Centre of Food and Fermentation Technologies will result in solutions for unvaried quality of Vichiunai pizza bases, irrespective of the possible change in the qualities of the raw material. Knowledge-based innovation draws on the analysis of the raw material and the qualities of the dough and the evaluation of technological regimes. „Collaboration with AS Paljassaare Kalatööstus on the improvement of the quality and stability of the pizza bases is a good match to one of our main research fields – studies on the preservation and quality improvements of the food products,“ said Urmas Sannik, the head of the Competence Centre of Food and Fermentation Technologies. "In order to ensure practical implementation of scientific solutions we will carry out examination of production technology and, if necessary, also involve specialists with international experience,“ Sannik added.
